
Potatoes are most definitely a staple in Nordic cuisine. A generation or so ago a normal meal would have simply been potatoes and some meat. Of course simple boiled potatoes would have taken centre stag, but for more important events something a little more luxurious like fløtegratinerte poteter would have been the dish to serve.
In my part of Norway we are surrounded by potato farms. Every other field is potatoes or onions growing, both ingredients we use every day in Norway. At the end of the summer the fields are covered in flowers on the potato plants and it's wonderful to be able to go to the farm and buy potatoes that have just been dug up from the field next to the barn. Kortreist (short journey) food is the best!
