Fish features in a big way in Nordic cuisine and gravlaks especially. I always make sure I have plenty of gravlaks and smoked salmon in the fridge for any celebration and as lovely as it is, it's made even more delicious with a simple mustard sauce.
This recipe is a really old traditional one and as you know I love traditional recipes. It's based on a Nordic recipe from the 1300s and it's just a few ingredients that you probably already have in your store cupboard. I've added the dill to my recipe and I think it gives it a lightness and fresh, herby flavour that cuts through the sharpness. You could add any herb that you have available, but dill is the most quintessentially Nordic herb, in my opinion.
