Småsuppe is such a classic soup from the county of Vestfold in Norway that it would be a crime not to include it in my blog at some point. I've been on a bit of a roll recently with soup through the winter months. And I've found myself down the rabbit hole of soup research. If there is such a thing!!!
Really to call småsuppe a soup is stretching the realms of what a soup actually is. It contains so many hearty ingredients that you are honestly looking at a stew with a broth. With no more than some stock, meat, a few root vegetables and the green freshness of leeks and some herbs, småsuppe is a dish we can easily imagine being savoured in the cold evenings in cosy farmhouses in days gone by. It must have been wonderful to come in from the snow and ice to the warm smell of a rich soup that they knew would warm and sustain them.
